Caramel Chocolate Chipwiches!!

Who doesn't love an amazing chocolate chip cookie, caramel and mouth watering frosting?!?


This recipe is super yummy & easy. The cookies can be made in a single bowl and the frosting is literally 3 ingredients! Watch us make these cookies on our Instagram Page!


COOKIE INGREDIENTS

  • 4 tablespoons of softened salted butter

  • 1/2 cup dark brown sugar

  • 2 tablespoons of molasses

  • 1 teaspoon vanilla

  • 1 egg

  • 1 1/2 cups all purpose flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt (but I always add a little extra)

  • 1/4 cup dark chocolate chips

  • 1/2 cup chocolate chunks

  • 1/2 cup mini chocolate chips (save for rolling)

COOKIE INSTRUCTIONS

Combine first 5 ingredients in a bowl and mix until combined. Add the baking soda, salt and half of the flour and fold until just combined. Add dark chocolate chips and chocolate chunks with remaining flour and gently combine.


Using a mini ice cream scoop, scoop dough into balls and roll in the mini chocolate chips.


Place rolled cookies onto a tray lined with parchment paper and refrigerate for at least an hour.


Preheat oven to 335 F. Place cookies at least 3 inches apart (they will spread out a lot). Bake for 11-13 minutes until deep golden brown. Let cool completely on the pan before removing. Cookies will be thin, chewy and fragile until completely cooled.



Once cookies have cooled, place one cookie with the bottom side up.


Using a spoon or pastry bag, spread 2-3 tablespoons of Sweet Cream Frosting and drizzle with Sweet Cream Caramel Sauce.


Top with another cookie and press until the frosting just reaches the edges.


Roll the edges in sprinkles and enjoy!






SWEET CREAM CARAMEL FROSTING


INGREDIENTS

2 cups confectioner's Sugar

4-6 tablespoons Sweet Cream Caramel Sauce

1-3 tablespoons of water


INSTRUCTIONS

In a bowl, combine the confectioner's sugar and Sweet Cream Caramel Sauce. Mix until frosting is smooth and firm. Add water as needed to loosen the frosting. Check out how we made this simple frosting via our Instagram Page!
